Ingredients

  • 6 cups BROCCOLI FLORETS (WITH 2" OF STEM REMAINING)
  • 2 Tbsp. EXTRA VIRGIN OLIVE OIL
  • 1/4 cup DRIED CRANBERRIES*
  • 1/2 tsp. SEA SALT
  • 1/4 cup PUMPKIN SEEDS, TOASTED**

Roasted Broccoli Directions

Procedure:

  1. Preheat oven to 400°F.
  2. In a mixing bowl, toss together the broccoli, oil, cranberries and salt.
  3. Spread onto a baking sheet and bake for approximately 12-15 minutes.
  4. Return to mixing bowl and toss with toasted pumpkin seeds. Serve warm or at room temperature.

 

Notes:

* Most dried cranberries are sweetened with refined sugar. Look for those which specify they are fruit juice or maple syrup sweetened.

** Toast pumpkin seeds at 300°F for 8-10 minutes or until slightly browned and puffed up. Listen for the sound of the seeds
popping because it doesn't take long for them to go from toasted to burned.
