Rutabaga & Carrot Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 1/2 cups chopped leek (white and pale green parts only)
  • 1/2 cup chopped celery
  • 1 garlic clove, minced
  • 2 cups 1/2-inch pieces peeled turnips
  • 2 cups 1/2-inch pieces peeled rutabagas
  • 2 cups 1/2-inch pieces peeled russet potatoes
  • 2 cups sliced carrots
  • 1 28-ounce can diced tomatoes in juice
  • 4 14 1/2-ounce cans vegetable broth or low-salt chicken broth

Butternut Squash Lasagna

Ingredients:

  • 1 large butternut squash
  • 2 cloves garlic, crushed
  • 1 tbsp honey
  • 1 tsp oregano
  • 1 tsp basil
  • salt and pepper, to taste
  • 1 10 oz package chopped frozen spinach, cooked and drained
  • 2 cups cottage cheese
  • 12 cooked whole wheat lasagna noodles
  • 1 1/2 cups shredded mozarella cheese

Indian Style Butternut Squash

Ingredients:

  • 1 small Butternut squash, peeled, cleaned and cut in 1.5 inch cubes
  • 1 large shallot or 1 medium red onion, medium sliced
  • 4 tbsp olive oil, divided
  • 1 tsp black mustard seeds
  • 2 sliced green chilies
  • 1/4 tsp dried mango powder (amchur)
  • 2-3 curry leaves (optional)
  • 1 tsp chili powder
  • 1 tbsp Cumin & Coriander powder
  • 1/2 tsp Turmeric powder
  • Light sprinkling of salt
